西荻窪本店で提供されている「軍鶏そば」は8年連続でミシュラン・ビブグルマンに選出いただきました。

その「軍鶏そば」を麻布台ヒルズ店では「より軍鶏を楽しんでいただきたい」という想いからスープの出汁だけでなく通常ではなかなか味わうことのできない軍鶏肉をトッピングし、軍鶏に特化した新しい軍鶏そば「ネオ軍鶏そば」を、麻布台ヒルズ店限定でご提供しております。

ヴィーガンメニューもございます。

Our shop specializes in ramen noodles with a focus on "Syamo chiken” and “soy sauce”. The "Syamo Ramen" served at the Nishi-Ogikubo main shop has been selected as a Michelin Bib Gourmand for eight consecutive years. At the Azabudai Hills shop, we have added not only the broth but also the rare Syamo chiken meat toppings in order to make our "Neo Syamo Ramen" more enjoyable for our customers. We also have a vegan menu. Please check the ticket machine in the store.

軍鶏と醤油にこだわった「軍鶏そば」をはじめ、煮干しそば、まぜそば、テイクアウトメニューをご用意しています。「軍鶏そば」は脂肪分が少なくスッキリとした肉の旨味が濃い軍鶏スープに香り豊かな生揚げ醤油を合わせたラーメンです。通常メニュー以外にも、全国から厳選した食材を使った限定メニューも提供します。また、女性やお子さま連れのお客様も利用しやすい内装になっており、お子さま専用メニューもご用意いたします。

We offer Shamo Soba, which is made with Shamo chicken and soy sauce, as well as Niboshi Soba, Mazesoba, and takeout menus. Shamo Soba is a ramen that combines Shamo chicken soup, which is low in fat and has a rich meaty flavor, with fragrant Namaage soy sauce. In addition to the regular menu, we also offer limited menus using carefully selected ingredients from all over Japan. In addition, the interior is designed to be easy for women and customers with children to use, and we also have a menu for children.

麺尊RAGEの厳選醤油

全国から厳選した無添加醤油をブレンドしています。自分が目指すラーメンに近づくために、醤油を熱くします。一度適温に焼き上がったら、醤油を座らせます。香りや味はパストチャリの温度によって変わります。シンプルなラーメンを目指します。
だから化学調味料は使わない。化学調味料は悪くないと思う。素晴らしい素材の味をそのまま楽しんで頂ければ幸いです。

I blend additive-free soy sauce carefully selected from all over Japan. I heat the soy sauce to get closer to the ramen I'm aiming for. Once it's cooked to the right temperature, I let the soy sauce sit. The aroma and flavor change depending on the temperature of the pasta chari. I aim for a simple ramen. That's why I don't use chemical seasonings. I don't think chemical seasonings are bad. I hope you enjoy the flavor of the wonderful ingredients as they are.
